Catching up!!

Hi family, we just wanted to catch up on more posts for our blog. It's so hard to do these days.  Our boy is getting so huge and extremely energetic and playful!! He's more playful than ever!!! ;) He is sitting up now and is loving being more and more of a big boy. These are pictures of him at 5 months. I can't believe he's 6 months today!!! It's amazing. God is so good, he has given us a treasure from above, a sweet, loving, happy, cheerful, healthy, strong boy. Christmas is right around the corner, and we're glad it's on Sabbath so we can spend it with our spiritual ohana! JJ's auntie Emily got him a present and she's so excited for him to open it this weekend, how swweet!! ;)
It's a bittersweet Christmas, on the one hand we love Hawaii and the beautiful tropical environment and aloha spirit; yet we will be missing a crucial part of Christmas: family.

Hey everyone!!!


We had awesome Sabbath this weekend! Kat got to be on the radio with Dr Neil Nedley, it was so cool meeting him and his wife! They were on their 25 year wedding anniversary trip, yet he took the time to be on the radio. He was such a nice guy. We're so excited about Jeremiah's first Christmas, he'll be 6 months old!!! ;)

He's such a joy, such a happy sweet cheerful boy!!! He's working on his top teeth now! Wow!! Poor little guy, he's had growing pains from it, but his 3rd tooth is almost in and when that happens he'll probably feel a lot better, hopefully! ;)

Well we're excited about this Christmas weekend, we won't have our family, but we'll have our spiritual family to spend it with!!! Thank-you Jesus for that :)

Birthday Weekend in Kona

Hey everyone!

Here are some pics form my birthday weekend in Kona. First stop: Hapuna Beach, then Waikoloa, lastly Kailua-Kona. We had a great time with the Martinez family, they are so sweet. We love them. We so needed this break, it's been a little rough with Jer's schedule, they rarely give him 2 days off in a row, but they did on my birthday weekend, perfect timing huh!?!

On a side note: Sleep is hard to come these days, we thought Jeremiah was going to stay on a pretty good schedule sleeping 6-8 hrs through the night, but since he's been teething for the past few weeks....he's been waking up crying full of pain...it's like when he was a newborn all over again, waking up every 2-3 hrs :(
 I saw the evidence!...His first tooth bud!!! I can see 2 little teeth impressions on his lower gum and one of them has already broken through, I can even feel it with my finger. The other one is starting to pop out too! EXCITING!!! :) Since he loves chewing on things, we make sure we have plenty of "chewable" things for him around. He also likes frozen banana puree.

First time Sweet potatoes!!!!!!!!

I love those classic Gerber baby spoons, they are perfect for their sweet little gums that like to act like they can BITE! haha ;)

FUN with our SON

When the doctor told us that we use use the Johnny Jumper (for his 4 mo. appt.) we were soooo excited! (I might add that Daddy wanted to put him in that thing when he was barely 2 months old haha)
This jumper is so much fun for him and for for us to watch him in, it has cute toys in it and everything, it's made by Graco.


Yay, now the jumper can be the shock absorber of his jumping and "standing" instead of my arms! ;)




At the end of a long, fun-filled day, sleepiness abounds.... ;)
PS We had a great weekend in Kona with our sweet friends, I had such a nice birthday yesterday. Just a chill day spent with loved ones. I love you guys, thank-you all for your calls, messages, and Happy Birthday singing, it made me feel like you guys were here with us! ;) I'll do a post of this weekend soon.

Toll house cookies...uh oh!



I baked some homemade chocolate chips cookies, yum! They are so good! I used the Toll house recipe, and I made some homemade Almond milk to go with them.....


WARNING: THESE ARE HIGHLY ADDICTING AND MAY CAUSE WEIGHT GAIN! ;)

Original Nestle Toll house Chocolate Chip Cookies

2 1/4 cups all-purpose flour
1 tsp. baking soda
1 tsp. salt
1 cup (2 sticks) butter, softened

3/4 cup granulated sugar
3/4 cup packed brown sugar
1 tsp. vanilla extract
2 large eggs

2 cups Nestle Tollhouse Semi-Sweet Chocolate Morsels
1 cup chopped nuts (optional)

Almond milk

1 cup Almonds (soak for 1-2 hours)
4 cups of purified water
2 tbsp maple syrup
pinch of salt
1/2 tsp. vanilla extract

After you've soaked the almonds, you drain the water and toss them in the blender. Add 1 cup of water and blend with pausing a few times in between. As mixture begins to smooth out, slowly add another cup of water as it blends. Once completely smooth, add the remaining 2 cups of water and drain into a pitcher. Next add 2 Tbsp. maple syrup (you can add more to your liking), pinch of salt, and vanilla extract. Drain once more to get a silky smooth finish. Enjoy!!!

* Toll house recipe was printed on the back of the semi-sweet chocolate chips I bought.
*Almond milk recipe is my own.

**If you think it's silly to drink Almond milk with these buttery delicious, non-vegan cookies, well don't, it makes you feel better about eating them one after the other!
